A Healthy Peanut Butter Blondie Recipe

I am always looking for fresh and healthy places to eat out with friends. A few weeks ago after hiking around Lynn Valley Loop on the North Shore, I came across Buddha-Ful Cafe.  This cafe has a cool vibe to it; the seating arrangement is either swing like chairs connected to the roof and tree stumps at each table. All the food served is organic, vegan and almost everything is made in house.  If you are ever in the area you should check it out!

They have quite a variety of different things to try; from smoothies, juices, breakfast bowls, wraps to dessert! One in particular the “Peanut Butter Peace Cake” was calling my name! (The far left dessert.) It was A-M-A-Z-I-N-G!

I decided I wanted to make my own gluten free, vegan, and as sugarless as possible but still taste as good as Buddha-Ful Cafe. I came across a blog the ambitious kitchen which has some awesome dessert recipes that are healthy…   I found a similar version of the peanut butter peace cake; Flourless Chocolate Chickpea Blondies. These are definitely worth making at some point!  I was thoroughly surprised when I made this recipe. The chickpeas blended well with the other ingredients, and completely undetectable.
